Recipe of Rasmalai

Rasmalai is one of the most demanding and ideal dessert in every occasion. Its soft small balls immersed in chilled creamy milk gives a delightful impression in front of the person. Most of  the women think that it is very difficult to cook at home. But I am telling all of you that it is very easy to cook at home. Do not be hesitate to make it. Here I will tell you the most easiest and simple way to make the rasmalai. Below there is a list of all the ingredients which are used in rasmalai.

Ingredients for Rasmalai:

1)      2 kg  fresh milk not tetra pack milk

2)      2 cups sugar

3)      4 to 5 green cardamom (elaichi)

4)      2 cups creamy powdered milk of good brand

5)      2 table spoons baking powder

6)      1 table spoon wheat flour (maida)

7)      2 table spoons oil which should be melted not freeze

8)      2 eggs

9)      1 ounce khoya

10)   1 cup of almonds and pistachio

Procedure:

First of all keep the 2 kg fresh milk for ras to boil until it remains slightly creamy. It should not be too hot because it will make the rasmalai balls hard. Put 4 to 5 green cardamoms in the boiling milk. Then add 2 cup sugar and 1 ounce khoya in it and mixed it with the help of spoon and leave it for 10 minutes with low heat.

Take a flat bowl, clean it and make sure it should be dry. Now put 2 cups of creamy powdered milk in that ball and drop 2 table spoon baking powder and 1 table spoon wheat flour in it and mix them.

Then mix 2 table spoons of oil which should be melted not frozen, beat 2 eggs and gradually add them to the flour mixture and knead that flour gently. Do not put water in it while mixing even a drop of water.

When the dough is ready than shape it in small balls. It’s up to you that what shape you would like to give them either round or cylindrical. After making the balls do not leave them for more time because of baking soda they will become harder so gently add them into the boiled milk.

Cook them on low flame until the dough balls expend and rise on the top of the milk. When they come to the top of the milk turn of the flame and serve them in a bowl, garnish them with almonds and pistachio, place them for 15 minutes in the freezer for chill.
